One of my favorite cookbooks is Clean Food by Terry Walters. This is an easy summer recipe. Great for those summer cookouts!
Ingredients:
2 pounds of cherry tomatoes
3 cups of cooked chickpeas
4-5 scallions, chopped
Dressing:
1 garlic clove, peeled
1 large bunch cilantro (about 1 cup)
1/2 cup extra virgin olive oil
2 tablespoons lemon juice
Sea salt and freshly ground pepper to taste.
Halve tomatoes and mix with chickpeas and scallions.
Turn food processor on, drop in whole garlic clove and mince. Turn off processor, scrape down sides, add cilantro, olive oil, lemon juice, salt and pepper and pulse to combine. Drizzle dressing over salad, toss to coat and serve or chill and serve.




This is awsome – it went directly to the printer, and will accompany the BBQ chicken I’m planning for dinner tonight!
