This is a great snack for kids and adults! These treats have been kid tested and approved by my kids and their friends.
Peanut Butter Flax Crispies – recipe adapted from Catherine Katz
Ingredients:
- 1 cup of honey
- 1 cup natural peanut butter
- 1 cup of flax meal (you can grind your own flax seeds in a blender to create the meal)
- 5 1/2 cups Crispy brown rice cereal (can be purchased at most grocery stores in the cereal section)
- Optional: 1/2 cup of chocolate chips
Directions:
Add honey and peanut butter in a sauce pan and heat until they are blended and the peanut butter is melted. In a mixing bowl add the brown rice cereal and the flax meal and mix thoroughly. Using your hands to mix these ingredients works well. Add the peanut butter and honey mixture to the dry ingredients and stir with a spoon. It may take a little bit of mixing to get it mixed well. Pour the mixture into a 8×12 pan and use damp hands to flatten ingredients into the pan. Refrigerate for 30 minutes and cut.
You can serve this at room temperature or cold. I prefer them a bit chilled.
