Oat Bars – adapted from No Sugar Oat Drops Recipe
- 1 1/2 cup of rolled oats
- 1 cup coconut flakes
- 1/2 teaspoon salt
- 1 1/2 teaspoons of cinnamon
- 1/2 teaspoon allspice
- 1/4 cup of almond meal
- 1/4 cup chopped almonds
- 1/4 cup chopped Pepita’s or sunflower seeds
- 1/2 cup dried blueberries
- 1/2 cup dried cranberries
- 2 – 3 mashed ripe bananas
- 1/4 cup applesauce
- 1 1/2 teaspoons of vanilla extract.
Preheat oven to 350 degrees. Mix all dry ingredients together thoroughly. Add the dry fruit and nuts and mix. In a separate bowl, combing the bananas, applesauce and vanilla extract and mix well. Once mixed add it to the dry mixture and mix well. In a non-stick or greased 8×8 pan pour ingredients into pan. Bake for about 20-25 minutes and let cool. Once cooled, cut and serve.
I prefer these at room temperature and found them to be great for breakfast.
