- 2 cups of cooked quinoa (note 1 cup of uncooked quinoa will make 2 cups of cooked quinoa)
- 1 can chickpeas, drained and rinsed
- 1 pint grape tomatoes, cut in quarters
- 1 cup cucumber, chopped
- ½ cup parsley, chopped
- ½ teaspoon garlic powder
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 – ½ cups feta cheese, crumbled
- Salt and pepper to taste
Cook quinoa according to package directions. While the quinoa is cooking, in a large mixing bowl, combine chickpeas, grape tomatoes, cucumber, parsley and garlic powder. Once quinoa is done cooking, add to the mixing bowl containing the above ingredients.
Next, add the olive oil and red wine vinegar and mix thoroughly. Add salt and pepper to taste, then mix feta cheese or top depending on your preference.
