If you are tired of the same old, same old with dips this one is a great one try! I loved it!
Lemony Artichoke Dip recipe courtesy of The Clean Food Cookbook by Terry Walters
- 1 garlic clove, peeled
- 1 shallot, peeled
- 2 tablespoon lemon juice
- ½ cup vegan mayonnaise
- 1 tablespoon apple cider vinegar
- ¾ cup great northern beans
- ¼ teaspoon ground mustard
- ¼ teaspoon ground white pepper (I used black because that is what I had)
- 1 4 ounce can chopped green chilies
- 2 ½ cups canned artichoke hearts, drained (I used 2 cans)
With food processor on, drop in the garlic clove and process until minced. Scrape down sides of bowl, add all other ingredients except artichokes and process until well combined. Add artichokes and process only briefly so that small chunks remain. Season to taste with additional sea salt or chilies and serve. Serve with crackers, pita chips, tortilla chips or veggies.
