I used to be addicted to ice cream. It was one of those treats that I could not get enough of especially in the summer. I have curbed my addiction over the years and still enjoy ice cream just less often. I found this recipe on pinterest and wasn’t sure about making an ice cream out of bananas but to my surprise it was pretty good. I wasn’t sure if I was expecting it not to be good but when I tried it I was pleasantly surprised.
This is great treat for hot summer days! Why don’t you give it a try?
A Twist on Homemade Ice Cream - adapted from Single Ingredient Ice Cream recipe from The Kitchn
Ingredients:
- 4 bananas
- 2 – 3 tablespoons of peanut butter
- 1/3 cup chocolate chips
Peel the bananas and slice them in 1/4 – 1/2 inch thick. Place the bananas in the freezer for about an hour or until they are frozen. Once frozen, put them in a food processor and pulse. You will need to scrap the edges to the food processor several times. Continue to pulse the bananas and they will eventually turn to a frozen creamy consistency. If needed you can add just a bit of milk to help with the blending but it is not necessary. It will look like soft serve ice cream. Add the remaining ingredients and pulse until mixed.
Scoop out immediately and serve.
Side Note: Feel free to mix it up with any ingredients you enjoy
